White Labs WLE4100 Ultra Ferm is a liquid amyglucosidase (highly concentrated) from selected classical strain of Aspergillus niger.
Applications:
- To reduce saccharification times
- To Saccharify unmalted cereal brews
- To increase attenuation
For use in homebrew brewers often want to produce light beers or dieteic beers. In these cases the brewer wants a controlled or complete hydrolysis of starch and dextrins to fermentable glucose. Traditional brewing methods permit only 75-80% hydrolysis in starch present in the grain raw material. Ultra ferm amyloglucosidase permits total hydrolysis of dextrins to fermentable glucose, from all types of starch.
One vial is good for 5 gallons and will increase the fermentable sugar in your mash. Optimal pH is between 3.5-5.5 and temperature should not exceed 140F. The Ultra ferm activity is completely destroyed when the wort is helf at 85 for 10 mins.
Use Ultra Ferm to make your Brut IPA. Maybe added along side of the yeast to reach a gravity of 1.000 or close. Doesn't have to be just in the mash.
Add to the brewhouse or fermentor. In homebrewing, the dosage is 10ml - 1 pack- for 20/25 gallons.
